Lentil Soup Recipe

Place the olive oil into a large 6quart Dutch oven and set over medium heat. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6 to 7 minutes. Add the lentils, tomatoes, broth, coriander, cumin and grains of paradise and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Using a stick blender, puree to your preferred consistency. Serve immediately.

When I first made this it was after seeing the episode and as a hopeful solution to getting more protein in our diet without having to eat more meat. It was the first time I had ever had lentils and now I make a giant vat of this about every couple of weeks to send with my hubby for lunch at work. The flavor is great and to me it has a tiny kick to it. I follow the recipe exactly but when it done cooking, I don puree it at all. I find that we both like the more chunky consistency. It easy, it very cheap, it very filling, and everyone who tried it has loved it. And did I mention the awesome amount of protein? ;
